Many have asked for the recipe so here it is my version of chicken parmesan. It’s a non-traditional, “better for you” version that taste really good and is very simple to make . You can buy italian seasoning at the supermarket in the spice section or you can make your own. This recipe makes one serving but you can increase the serving for however many people. Enjoy!
2oz. Chicken Breast
1 Egg White
2 tsp of Olive Oil
3 Tbsp of Panko Bread Crumbs (plain)
1/2 Tbsp of Shredded Mozzarella Cheese
1/2 Tbsp of Italian Seasoning
1/2 Tbsp of Parmesan Cheese
Whisk egg white in a small bowl and let chicken soak in the egg for about 30 minutes in the fridge. Remove chicken from fridge. Place the panko bread crumbs on a flat plate and mix in italian seasoning. Pre-heat a pan on low-medium flame and pour in olive oil. Take chicken and coat in panko mixture (you might have some left over on the plate). Place chicken into pan with olive oil and cook for about 15 minutes or until juices run clear. Before removing chicken, sprinkle with parmesan cheese. Remove chicken and plate. Add shredded mozzarella cheese and serve with your favorite pasta and sauce. Deeeee-lish!
