Here is my version of TrulyJess’s protein cake as requested! I made it into a more dessert cake because I am using it as my substitution for Vitatops because of my allergies. All of them have wheat and some have peanuts in them too. To be on the safe and happy side, I made these little chocolate protein dessert cakes. Super delicious and filling and you can play with the ingredients to make it your own! I have a pumpkin one coming soon too, so stay tuned for that. Enjoy!
3 Tbsp Applesauce
2 1/2 Tbsp Bisquick Gluten Free Baking and Pancake mix Or
2 Tbsp Flour and 1/2 tsp Baking Powder
1 Packet of Stevia
2 tsp Coconut Flakes
1 Tbsp Cocoa Powder
1 Dark Chocolate Square, Chopped Up
Place all ingredients except for the dark chocolate and coconut flakes into a bowel and mix. Spray a microwave safe bowl with non-stick cooking spray and place cake mixture into sprayed bowl. Place bowl in microwave for about 4 minutes, checking every 2 minutes. Once done, remove cake from bowl and let cool. Cut cake in half and place half of chopped dark chocolate into middle of cake. Put cake back together and place remaining dark chocolate on top along with coconut flakes. Serve as is or with a little bit of vanilla ice cream. Serves one purely decadent dessert!
1. Use half a white chocolate and dark chocolate square and crushed peppermint for a peppermint bark like cake!
2. Use fresh raspberries instead of coconut flakes for some extra fiber ‘n’ fruit!
3. Top your cake with almonds and dark chocolate!
4. Combine half a dark chocolate square with 2 tsp of any nut butter!
