This is just heaven! This actually came about through another mistake. Don’t you love when mistakes work your way? I was going to initially cover the lemon fudge bites in white chocolate, but I ran out! Instead, I had a bag of coconut flakes and thought quick. I rolled the lemon fudge bites in coconut flakes and voila! A scrumptious lemon coconut fudge bite emerged.
I’m hooked on this fudge bite. I had to wrap them asap in order for myself to not devour them all. Ahh…they are tasty bites of summer. Where is summer? It needs to come faster, wouldn’t you agree? For Fudge Bites:
100g of Dark Chocolate (Preferably 70% or Your Choice, I used Ghirardelli Twilight Delight 72%)
1 Tbsp of Coffee (Already Made)
2 Tbsps of Butter (I used Brummel and Brown)
4 Large Egg’s Egg Whites
3 Tbsps of Powdered Sugar
Dash of Salt
1/3 Cup of Vanilla Frosting (I used Pillsbury Sugar-Free)
1/2 Tbsp of Lemon Extract
3/4 Cup of Unsweetened Coconut Flakes
1/4 Cup of White Chocolate Chips, Melted
Break chocolate in a bowl into small pieces and add coffee grinds. Melt either in a microwave-safe bowl (stirring every 20 seconds) or on stove top.
Place butter into melted chocolate, blend well. Once butter is stirred in, add sugar. Beat the egg whites with a dash of salt and then add the egg whites to chocolate mixture. Add frosting and lemon extract to chocolate mixture and blend well.
Place fudge bites mixture into freezer and let it set for about 30 minutes (see note below)*. Once mixture has firmed, remove from freezer. Using a small spoon or tablespoon, spoon out some fudge bite mixture and drop onto a plate with a sheet of parchment paper. Repeat until all fudge bite mixture has been used up. Place into freezer for 30 minutes.
During the last 5 minutes, begin to melt white chocolate chips. Once fudge bites have firmed, drizzle white chocolate over fudge bites. Once all fudge bites have been nicely drizzled in chocolate, roll each one into the coconut flakes with a spoon. Place back into freezer for 10-15 minutes.

*If you are going to make them into fudge squares instead, skip this step and just pour fudge mixture into a large pan covered in parchment paper and drizzle the melted white chocolate over it and sprinkle with coconut flakes. Then place back into freezer for about one to two hours and cut into small squares. Best served chilled!
