For the most part, breakfast and snacks stay consistent. Since I have been on the go for most mornings and don’t have a microwave on hand (I had cold oats), I’ve been doing cereal (Fiber One Honey Cluster, Total Whole Grain, Special K) adding a little fruit/ nuts/ seeds mixture plus some fat-free milk. Some days I do soy. This plus my morning coffee keep me going for a few hours. I usually munch on more fruit, a string cheese or a Kind Bar for a snack. The bars come in if I have a long day of teaching. Lunches I keep it to sandwiches or Boca veggie burgers. My favorite sandwich combo is turkey, Swiss, cucumber, tomatoes and spinach on wheat bread. As a side I will have pretzels, baked Lays or Late July tortilla chips. They are delish.If I am home for my “mid-afternoon” snack, I will have a smoothie (protein powder, some fruit and maybe almond/ soy milk). My on the go version is some Greek yogurt. Noms!Dinners vary and sometimes look the same as lunch. Pat and I eat dinner about 3-4 nights together depending on our schedule. I love this chili recipe from Vegetarian Times! I use ground turkey to make it non-vegan and nix some of the spiciness.When I’m solo, I will do either a sandwich/ veggie burger or any leftovers that I froze from previous dinners. This one below is a combo of a previous dinner and veggie burger.After dinner, I’ll sometimes munch on a cookie or a little dark chocolate. All things in moderation right? 😀
I’ve been in the mood to try new things, must be this weather. Though winter was supposed to happen some point in October for us New Englanders, it really hasn’t hit until this month. The old lady in me doesn’t like the winters anymore. Must be because not only do I have to bundle up, but I have to make sure this pumpkin is too. Though I could cook oats and prep them for the week, I honestly have been on a cereal kick.Either Fiber One, Total Whole Grain or SpecialK Coconut, Cranberry and Almond.Sandwiches are still my go to for quick lunches. I’ve been on the hunt for different breads to make them more tasty. Like this Italian herb loaf. So good!With the new year upon on, this mama has a lot of work lately. Not only for myself but for those who rely on me to whip their bodies into shape.

Cookies for a snack? Yes please!
I don’t know what it is but I am in love with these granola cookies. Trying out blueberry instead of the cranberry.Mommy and me yoga: It was a little baby massaging for her and some post-natal yoga for mommy. Flatout Foldit’s: I like the original ones but I wanted to get my hands on the ancient grains one. So good and hearty at 10g of protein and 7g of fiber.Baby hoodies with ears (by Carter’s). 😀Whole Grain PB Crackers: Pat loves these to have as a snack and I was so happy to find whole grain ones with a little less calories and more fiber! Now I can keep some handy for a snack too. I use to be addicted to Sun Chips years go and now they are back!Protein Kind Bars: This was perfect after teaching a couple classes back to back to replenish protein, some carbs and good fats!Some Shakeology to refuel; this time I’ve been enjoying the vanilla flavor. Fear not, for I am here with an updated post on my daily eats. Now that my appetite is 95% back to normal as of 15 Weeks, you will see healthier options. Let’s get to it, shall we?
Brunch: I woke up late yesterday, I wasn’t feeling too great. I made my usual steel cut oats w/ peanut butter and side of orange juice (x’s 2). This time I added blueberries instead of raspberries. #PartyAnimal.Mid-Morning Snack #1: I was trying to figure out if maybe I had a little caffeine withdrawal, so I got a soy latte w/ one pump of toffee nut. It didn’t really help, but it was still delicious.Mid-Morning Snack #2: I went to do a little grocery shopping to pick up more orange juice and fruit. I got a little hungry and munched on this Lemon Vanilla Luna bar. At the store, I spotted some goodies to bring to Patrick for St. Paddy’s Days. Mmmm.Lunch, Part #1: I normally don’t do lunch these days, I’ll have acouple rounds of snacks. First up was a Kind bar and a serving of Skoop‘s A-Game mixed with orange juice. Lunch, Part #2: Then a bowl of fresh strawberries and a vanilla Yoplait Greek whips.I had to go into work for a few hours before my awesome co-worker came in to relieve me. When I came home, Patrick had brought me some “get well” goodies. He sure knows how to make a pregnant sick lady feel better ❤The box was a package from his sister that had a few items for Sam that she knitted herself. They were absolutely adorable!
Dinner: I was just going to have some toast and eggs but Patrick really wanted stuffed crust from Pizza Hut. I had two small slices with a garlic and herb Laughing Cow cheese wedge on the side.After dinner, I called it a night and went to bed. This morning, I feel a bit better, but I am going to the doc’s later today to see if it’s anything.
It was nice to just have a break and enjoy hanging out with my dad and brother. He loves crepes so I made him some for breakfast before his trip back. And guess what? I had my FINAL final on Friday. It feels so good to be done and I get a mini break until June 30th. Saturday morning I needed extra coffee; between waking up at 6:00am, my final, Friday night spin class and cleaning I needed a giant 32oz. size.I also went to a conference this week for the Northeast Section of Institute of Food Technologists. There were so many great food companies there from flavors, colors, extracts. Blue Diamond and Ocean Spray were there too. I got to eat a lot of delicious things from truffles, iced coffee samples, all natural fruit gummies and these delicious things!The ride back took almost two hours with traffic. Good think I brought this to munch on. So, so good, but dark chocolate and sea salt is still my favorite!Oh and y’all would be proud that I met my two times a week “fasted” cardio/ early works. I did spin at 6:00am one day and an early spin sesh this morning. Check out my leg muscles, they are getting pretty lean and muscular.
I’ve also been changing up my macros and making sure that I get proper nutrition! Check out this article about carbs at night. It is all a science and you have to find what works for you. What works for me, may not work for you and it depends 100% on your goals. Win, win! We are getting there; slowly but surly back on that routine grind and making sure to refuel post workout. I also like to count my fiber and sugar intake as well because I always find that I have to watch those as well. For this WIAW, I am going to show you a few of my meal/ snack combos and show you how I meet and what exactly are my macro requirements!
My goal is to lose about 10lbs, build muscles, lean out and stay healthy! Through calculating my on Bodybuilding.com and My Fitness Pal (which I just converted from Lose It), not to mention trial and error, I have found the best macros from yours truly;
For my breakfasts now, I like to use about 1/3 of my daily carb intake. I usually make a double (or 1.5) serving ofprotein pancakesto keep me full for the morning with a smidge of almond butter and sugar-free maple.Here are two samples of “meals 4,5 and 6” that I take for work;And another; under the Chobani above is oats w/ chia seeds.Here is one of my “lower carb” days.Always on top of my meal prepping.My mom came to visit this past weekend and there were some dine outs, but I stayed on top of my game. At Olive Garden I got their Rosemary Chicken and swapped the mash potatoes for broccoli. No Excuses!Question: Do you count your macros?
