Day of Eats: Pregnant Edition

I don’t think I’ve shared a day of its on this blog.

For those who may remember, I use to be “Nutritiously Sweet” before I switched to Fit Coffee Mom. I did a ton of “What I Ate Wednesdays” but then once I got pregnant with Samantha, my day of eats became boring or super receptive.

Not to mention unhealthy some days... #pregnancycravings

For this day of eats, I’ll be sharing one of my work days during this pregnancy!

This post has been requested by some, so here goes nothing. 😉

Pre-breakfast:  I usually wake up pretty hungry, so I’ll have either toast or a banana to curb the hunger while I get dressed/ ready for my day.

Breakfast: It varies between Special K’s Red Berries cereal, oatmeal or Nutrigrain whole wheat waffles! 18671124_10103006128830590_2326381334240356815_nFor this day, I added a little chia, sunflower seeds, peanut butter, blackberries and splash of pure maple syrup.

Snack #1: I get pretty hungry quick no matter how big of a breakfast I have (because you know twins). I’ll usually do a serving of snap pea crisps with cheese… with coffee. 20170726_163407The baby boy in me make craves these salty things!

Lunch: Sometimes I’ll grab lunch from the cafe at work, other times I’ll do a frozen meal or leftovers. I try not to do too many frozen foods, but I do love these Healthy Choice steamers because you can control the sodium.20170728_075433The sauce is separate from the meal. I only add 1/4 of the sauce for flavor and I’ll add a little bit more rice for extra carbs/ energy.

Snack #2: Baby girl gives me those sweet cravings! 20170726_162240I’ll usually have some fruit. Lately it’s been red grapes or strawberries.

I’ll also do a couple dark chocolate truffles. #Yum 20170726_162005Dinner: I used to have dinner at work before pregnancy, but now I’ll have a “pre-dinner,” of a yogurt with half a bagel and peanut butter. 20170720_100921I don’t get home til 8:30pm and I am usually starving.

On these long work days, it something light like an eggwhite sandwich with cheese and maybe even 1/2 of a packet of Shakeology (or Vega Nutrition). 20170728_075404I’m still having a terrible time getting nutrients in from veggies, so Shakeology makes up for it! I also usually teach two classes (a barre & Tabata) so I need to refuel as many of those burned calories as I can.

Snack #3: Maybe a chocolate chip cookie [or 3] or some pretzel sticks if I’m feeling a little salty. 😉

That wraps of this post of a pregnancy day of eats! You can see there isn’t too much meat or veggies as I am working my way to get those in.

Eating 5-6 small meals during the day helps to keep the hunger at bay, especially with two little ones hogging my nutrients!

Blue Apron Meals

A month ago I decided to try out Blue Apron.

With all my pregnancy cravings, meals have become tough and super indecisive on my end. I browsed through the upcoming weeks (you can skip weeks you don’t like) and found one that sparked my interest!20170627_122315I found a deal (there is always one on their site) and only paid $29.99 for my first week. Now some weeks had some delicious looking pizzas, but I didn’t want to spend the money on pizza – I wanted to get all the meat!20170627_122545If you don’t already know, Blue Apron is a meal delivery service that comes in meals for 2 or 4.

The base is 3 meals per week, but you can add more for an extra cost. They also have wine you can purchase and provide a suggestion on each meal card.

The first one I tried was the soy marinated chicken thighs. Chinese food has been a big craving this time around during pregnancy so this meal was perfect. Unfortunately veggies is no on my top list for dinner (only lunch, so I saved it). 20170627_163253We had this meal without the veggies (though I added some snap peaces for a crunch) and topped the chicken over Jasmine rice.

I was worried that it was going to have too much “spice,” but it was seriously delicious! Definitely not a combination of spices and such I would have thought of.19657047_10103063655446790_5126684735565972270_nThe second one, the honey glazed chicken breasts. Again this one I tweaked but oh my gosh it was the one of the best chicken breasts I’ve cooked. I didn’t know a little honey and vinegar would bring out so much flavor.19732334_10103063650516670_7261793852661452978_nI served this over a rice pilaf mixed that I had made the night before (saved the Blue Apron side for another day) and a small garden salad. Seriously hit the spot and I’ll definitely be making this again.19247588_10103063655751180_4091737962622397908_nThe honey mustard pork chops were pretty juicy (according to the hubs, he had both), but the flavor wasn’t all there. I definitely think this dish should have been pre-marinated as oppose to making a pan glaze.506477-blue-apronAll in all, I did enjoy trying out some new flavor/ spice combinations that I would have never tried. The portions are pretty small (and calorie dense in my opinion for the size). I sent my sister-in-law a Hello Fresh week, and the meals looked fantastic.

Blue Apron seems a little more upscale, so it you are someone who likes high-end quality food, this is something worth a try.

I find that it is pricey and not enough food for the regular price of $59.94 per week. Our groceries are about $60 per week (for the THREE of us), so this exceeds our budget for food. But it was still a fun experience; with a coupon deal of course. 😉

MIMM #44: Starbucks Lover.

Breakfast… with the cold weather upon us, a marvelous cup of coffee is just the thing in the morning. Plus a delicious bowl of oats and some nuts and thangs on top has been a-mazing.And we’ve been wearing marvelous polka-dotty warm and cozy Carter’s wear.Starbucks has been my go to as of late to get work done. She tends to be very calm (sometimes even sleeps) in the Starbucks environment. Definitely my child. 😀I redeemed a free reward this week and tried this chicken flatbread post-pregnancy. It was not so marvelous! I remembered loving it before. Guess my taste buds have changed back to [mostly] norm.I’ve also been feeling pretty marvelous about how my post-baby body progress is going. After all, I do workout for a living! My tummy is tightening back up and I am seeing the quad definition come back in my legs. This is 15 weeks versus 3 weeks post-partum, not to shabby. I have a 4-week bootcamp program beginning in January. Program is designed for woman who are trying to get back to pre-baby body, lose weight or just get back on track from the holidays.

MIMM #18: Marvelous Eats & Treats

Happy, happy Monday.We are almost halfway done with March, can you believe it?

It also means I am almost halfway there til we meet baby Samantha! To “celebrate,” I did a marvelous post this past Saturday recapping my health and fitness from pre-pregnancy up until now and bought her these cute items last week.Marvelous is steel cut oatsAnd lots o’ fruit! I am seriously loving these steel cut oats from Quaker, along with these other items for breakfasts.Kathleen’s Quick Oats saved me during my long-ass Saturday. I was up at 6:00am. I don’t remember the last time I woke up that early for work. Maybe January?On my late work day this week, I came home to a little Quest surprise from Patrick. He gets me 😉On one of the sunny day’s last week, I took a little walk through my neighborhood. The sound of the water, the sun and the birds chirping, means Spring is coming soon.I replenished after with some Skoop aka my new favorite “supplement” addition to my diet.And that was my week ❤ It was busy but really nice with the sunny weather. The Journey In Between: Day #15

On August 15th, I “restarted” my health journey. And guess what? Today is day 15! Kinda cool right? *Excusesmynerdness*

Where are we at now? Leg progress is on point!

One of the key things I was trying to focus on was building my quads. I have pretty good shoulders and abs, well that area is always a work in progress.But my lower body and back have been my main focus this year and I am happy that surgery didn’t take away too much of my progress. I am back to pre-surgery weight and body. Now it’s a matter of building again. I started a little bit of my body building program this week but I didn’t spin twice this week like I wanted to (only did one session).Picked up some of protein staples for my meals. I also eat/ have ground turkey, protein powder, brown rice, quinoa, oats, peanut butter chia seeds, and veggies just to name a few extras not shown. Lots o’ snacks too. And when I can splurge? Quest bars.Breakfasts are usually a protein bar and berries or oats. Depending on my workout for that day, I will eat more carbs if it’s back or leg day.

For other days I stick to mostly protein sources for breakfast. I find that this works for me on my more intense strength training workout days (which just happen to be back and legs) I make sure to eat extra fuel. If I know I am going to attend a spin session later, I will have a nice bowl of oats for breakfast and maybe some extra brown rice with my lunch.

Lunches and dinners pretty much consist of a protein and veggie, sometimes good carb sometimes none (again, depending on my training day). I am feeling good and learning to take every training day one at a time. If my body isn’t up for it, I won’t train.

I use to think it was the end of the world if I didn’t workout but I learned that in order to be healthy for what life throws at you, you must be able take care of yourself first. Hope everyone has a happy and healthy Labor Day weekend. Any plans? I’ll be hanging out in Rockport tomorrow with the manfriend!

WIAW #93: Banana-Mocha Protein “Ice Cream”

Happy [early] WIAW everyone!

This week I show you some goodies and a few products I tried this past week. And also, yep you guessed it; a recipe! Thanks Jen for hosting this awesome food party, enjoy!

Celsius; Have you ever heard of them? “Celsius, burn more.” I wanted to see what the hype was about with this drink and surprisingly, it did nothing for me (even with 200mg of caffeine). But I do like that it has some vitamins plus tastes pretty good. I had one before my a.m yoga and it was a nice “pick me up” but nothing more.Post yoga, I had yogurt goodness; plain Greek with vanilla protein powder, chia, pumpkin and sunflower seeds. I also had an orange and some almonds on the side.Since I was super eager to try them out, I ended up having two of the new Luna [GF] protein bars in one day. Whoops! First up is the lemon vanilla. Now my favorite is the cherry almond. I have to say it was pretty good as I didn’t think I was going to like the “white coating” but it had a nice lemon flavor with a hint of vanilla.But of the two, the chocolate coconut almond was my favorite. It reminded me of the Balance dark chocolate coconut bar and I would definitely buy it again. The reason I like the Luna’s is because they have a good source of B12 and iron. I need all the iron I can get!Onto an actual meal, my brother and I went to Friendly’s last Friday. They actually revamped their menu and I ended up getting their burger salad minus the cheese and bacon. I enjoyed it, but wished the burger was bigger. Then we ended at Orange Leaf for some froyo goodness; I had peanut butter, pistachio and classic tart with raspberries, granola, walnuts and a peanut butter drizzle. Mmmm!I had my one double last week and got to meal prepping; oats with vanilla protein and chia seeds, chicken with broccoli and green beans, Chobani’s simply 100 vanilla (my fav!), apples, almonds, protein mocha and my vitamins.Now, it’s a been a minute since my last recipe, but I was craving ice cream and thought I’d shared my craving with y’all! I wanted coffee, chocolate and ice cream all a the same time. I decided to just combine it all and see where it took me.

And here is where I landed; A banana and mocha infused protein “ice cream.” Yep, that is where I went and it was so good. No I didn’t have time for pictures because well, I was busy devouring it! So here is a little snap shot of it but I am sure if you blend the following together you will get the same delicious result.Banana-Mocha Protein “Ice Cream”  Ingredients (Serves One):

  • 1 Medium Banana, Chopped and Frozen
  • 1/4 cup Non-Dairy Milk
  • 2 Tbsps Chocolate Protein Powder
  • Dash of Sea Salt
  • 1 tsp Ground Coffee (I used Green Mountain Chocolate Cappuccino)
  • 1 tsp Maple Syrup (*optional)
  • 1 tsp Maple Almond Butter (*optional)

Simply mix everything into a blender and blend away. Top with chia seeds, some nuts and extra Greek yogurt or eat as is!

My serving had about 10g of protein. It depends on what you use for your protein and milk but I used Top Nutrition’s Chocolate Ice Cream protein, unsweetened soy for the milk and added the almond butter.
