I am sharing with you one of my favorite oatmeal recipes that is perfect for your family’s Sunday morning breakfast. I usually make these for my fiancé and I on the weekends.
I like to prepare the batter over night (you made need to add just a smidge extra liquid in the morning) or wait about 30 minutes before cooking so the oats can absorb all the liquid. They are very nutritious and filling.
These do still have protein powder, just not as much. If you want, you can even omit the protien powder* all together and just add another tablespoon of flour. Simple.
Feel free to double (or triple!) this batch for a bigger crowd or why not save some for later? These pancakes freeze well once cooked and last in the fridge for about 3-4 days. Sunday Morning Oatmeal Pancakes (serves two)
Why did I start using Shakeology? Not going to lie, I was skeptical and saw it as a new fad. But after trying it out for a couple of weeks, I fell in love.Not only does it taste great, it offers so much goodness like nutrients, vitamins, proteins, minerals, probiotics, digestive ezymes and more! My tummy has never felt better and I haven’t needed to take my daily probiotic, since it’s *ehem* helping me stay regular.
Where have you been all my life?Chocolate Chia Protein Superfood Pancakes (serves one)
1 Serving Chocolate Shakeology
2 Tbsps Flour (wheat, oat, glutenfree – your choice)
1 tsp All-Natural Peanut Butter
1 tsp Chia Seeds
1/2 tsp Stevia
1 Egg White (whisked)
Dash of Sea Salt
Place everything in a bowl an add 3-5 Tbsps of water til desired pancake consistency is reached. Cook like a pancake and eat!

Ever since I got my Cellucor order in the mail, I’ve been having fun with breakfast. Making it my favorite meal again and much higher in protein.I’ve even added it to this protein pancake recipe.
This week my all-time favorite has been some protein pancakes. These pancakes are a semi “spin off” my PB2 protein pancakes recipes, which you cancheck out here. Enjoy!Peanut Butter Marshmallow Protein Pancakes (one serving)
2 Tbps of Flour (oat, wheat, or your choice)
2 tsps Smooth, All-Natural Peanut Butter
1/2 Scoop of Cellucor Peanut Butter Marshmallow Whey (or 1/4 cup protein powder of choice)
1 Large Egg’s Egg White
2-3 Tbsps of Liquid (use vanilla almond milk, soy, etc.)
1/4 tsp of Vanilla Extract
1 Packet of Stevia
Dash of Sea Salt
Toppings: Chia seeds, raspberries, maple syrup, etc!
Mix everything into a small bowl, except for the egg white and stevia. Be sure to add the liquid slow, depending on your desired pancake thickness. Whisk the egg white and stevia until nice whipped, then add to rest of ingredients. Let mixture sit for at least 5 minutes.
After, take pancake mixture and add in the egg white. Take a pan, spray it with non-stick cooking spray and turn the stove on to a low-medium heat.
Cook each side for about 1-2 minutes or until golden brown. Remove from heat and top with what your heart desires!

Ahh mornings.It’s my last work day Thursday; then I will be off Mondays, Wednesdays and Thursdays.
I decided to give up another couple of classes because I am noticing that I am getting short of breath sooner. I’m not even pushing myself to 100% (maybe 85%) but with baby getting bigger and my small upper body frame where my ribs/ diaphragm are, it isn’t a good combo.
Positive things on my mind?
This weather. I am able to do “porch” yoga again. This week is supposed to be all in the upper 40’s!Homemade Pancakes: Strawberry and Dark chocolate to be exact.My friend, Amy is just the best! Baby Stuff. I mean just how cute is this giraffe blanket? Macaroons. Patrick got me some French macaroons from Whole Foods and this raspberry one is delicious! I like vanilla ones but there is a pistachio one I really want to try, *hint hint Patrick.* Flowers ❤ He also got me some beautiful flowers that I woke up to Tuesday morning. My favorite colors; green and gold to represent UVM. However, I am sure they have something to do with St. Patrick’s Day.Lastly?
Protein Truffles. It’s so nice to crave these dark chocolate bad boys again! I’ve been making my protein truffles again and I even created a recipe (different from the ones I sell) for all of you to try so be sure to check it out.
