Samantha is loving the rattles, especially the egg shape; it’s her favorite!My current favorite pants to workout in are these bad boys from Walmart. Only six bucks, can’t go wrong!And post-work, my favorite is vegan chocolate Shakeology¬†with a side of baby.If I’m feelin’ it, I’ll go a little tropical and do Strawberry.I’m linking up with Friday Favorites over at Life in Leggings. Nutty Pumpkin Spice Oatmeal Cookies

I’m dropping by today to share a delicious fall treat for y’all – Are you a cookie monster like me?

If you’ve ever heard of the 21 Day Fix Plan or read about it, you’ll recognize these cookies.¬†I decided to do a Fall twist to them. This batch makes 16 small cookies and a serving is 2 cookies (one yellow container treat).¬†

If you are NOT doing the 21 Day Fix or want to add some “protein pizzaz” to the cookies, I added 2 Tbsps of Vanilla Protein and they tasted pretty bomb. But trust me, these cookies are delicious on their own.¬†

They also can be made gluten-free and vegan by using appropriate oats and chocolate chips. Yummy as a snack or for a quick breakfast, enjoy!Pumpkin Spice & Nutty Oatmeal Cookies Ingredients:

  • 1/2 tsp. pumpkin pie spice*
  • 1 cup rolled oats
  • 1/4 tsp. sea salt
  • 1 cup unsweetened applesauce
  • 1/4 cup semisweet chocolate chips
  • 2 Tbsp pumpkin seed pepitas*
  • 1 Tbsp toasted pecans*
  • 1 Tbsp almond slivers*
  • 1 tsp of maple extract*

Oven goes to 350 degrees; preheat. Combine oats, pumpkin pie spice and salt in a bowl. Then add in applesauce, chocolate chips and nuts/seeds and mix well.  

Drop tablespoon sized cookies on a baking sheet, bake for 14-16 minutes. BOOM you are done!

(*Original recipe has 1 tsp of cinnamon, 1/4 cup of toasted pecans and no vanilla)

Thinking Out Loud #18: Last Week Happenings

Whoa it’s been what, 10 days? This little pumpkin has been keeping me busy and work too. Speaking of pumpkin… donuts anyone? My mom came this past weekend to visit, it was so nice to see her!We had a nice time and enjoyed a quick trip to the farm. How funny a goat named after her dad? ūüėÄI can’t wait til Samantha is old enough to enjoy the animals. Speaking of enjoying… coffee anyone?Lots have been needed with my busy schedule.¬†And quick breakfasts/ snacks. Greek Yogurt & Chia Power Smoothie!

If there was a smoothie that gave me POWER¬†post workout, I’d have to say it was this one.

Behold the Greek yogurt & chia power smoothie.

It has everything: protein, healthy fats (and a little omega 3’s), a little carbs, electrolytes.Ingredients¬†{Serves One}

  • 1 Non-Fat Container of Plain Greek Yogurt (I used Fage 0%)
  • 1 Cup of Unsweetened Vanilla Almond/ Coconut Milk Blend
  • 2 Tbsps Vanilla Protein Powder
  • 2 oz. Coconut Water (plain or flavored)
  • 2 oz. [Regular] Water
  • 1 tsp Chia Seeds
  • 1-2 Packets of Stevia (depending on your desired sweetness)
  • Handful of Ice
  • Scoop of¬†Glutamine¬†(optional)
  • 1 tsp Pure Vanilla Extract¬†(optional)

Place everything into a blender and mix well.

Drink and enjoy the Greek yogurt, chia and goodness boost!

MIMM #35: Yoga & Coffee Break.

Hello friends.

This weekend was filled with lots of yoga reading, Starbucks, relaxing and a dinner with the in-laws. What better place to read then the marvelous Starbucks.And some marvelous sweet greens on the way out?For dinner, went to downtown Lowell.And found this restaurant called Cobblestones. I must say it was quite marvelous,¬†skinny baked fries always get me.It reminded me of the Franklin Cafe in Gloucester. Remember that place?¬†So that’s my weekend in a nutshell. My Two Favorite Smoothie Recipes!

I’ve been craving more smoothies as of late. Not only because of the weather but because I am starting to get that “full” feeling in my stomach but I feel hungry too. Having a protein smoothie allows me to still get a nutritiously snack/meal and fills me up just right.

Today, I am sharing with you two of my¬†favorite protein smoothies. The first is perfect for a mid-day snack and the second one is more of a meal replacement/¬†post heavy workout snack. Enjoy ūüôā

Tropical Raspberry-nilla:

  • 1 Packet of Crystal Light Peach Mango Green Tea (you can omit, use real juice OR¬†sub for real fruit)
  • 1/2 Cup of Frozen Raspberries
  • 1/3 of a Frozen Banana, sliced
  • 1/2 Cup of Unsweetened Vanilla Almond Milk
  • 1/2 to 1 Scoop of Vanilla Protein Powder (I use Optimum Nutrition Whey)
  • 6 oz.¬†of Water
  • Handful of Ice -> Blend all and enjoy!

Berry Healthy Green[ish] Machine:

  • 1/2 Cup of Frozen Blueberries
  • 1/3 of a Frozen Banana, sliced
  • 1/2 Cup of Unsweetened Vanilla Almond Milk
  • 1 Scoop of Vanilla Protein Powder (I use Optimum Nutrition Whey)
  • 1 Packet of “Greens”¬†OR¬†Handful of Spinach
  • 1 tsp of Ground Flax Seeds
  • 6 oz.¬†of Water
  • Handful of Ice -> Blend and enjoy!
